  1. In a cocktail shaker add 30ml Ardmore Legacy, 2 tsps castor sugar & half a lime squeezed
  2. Stir until sugar dissolves
  3. Place 8 mint leaves in the palm of your hand & give them a hard slap. Add to cocktail shaker
  4. Fill shaker with ice & shake
  5. Fine strain into a chilled cocktail glass & add 45ml sparkling wine
  6. Garnish with a mint sprig

  3. Top with a pale ale beer of your choice. Stir
